- Chane /chickpea
- Onion
- Black peppercorn
- Green chillies
- Garlic,cloves
- Stone flower
- cinnamon stick
- Cardamom pord
- Cumin seeds/jeera
- Water
- Bay leaf
- Dry red chillies
- Hing/asafoetida
- Kasmiri chillies
- Tumeric powder/haldi
- coriander powder/dhania
- cumin powder
- Garam masala/chaat masala
- Fenugreek leaves
- Salt
- Whole wheat flour
- Oil
Step By Step Photos
1. Soak chane/chickpea for 5-6 hours.
2. 2 onion, 9-10 black peppercorn, green cgillies, 8-9 garlic /cloves, small stone flower, 1 cinnamon stick, 1 black cardamom pods, cumin seeds, 5-6 tbsp water .
3. Masala paste and Tomato paste.
4. 1 bay leaf, 2 dry chillies, 3-4 cloves, 1 tsp cumin seeds, 1/4 tsp hing/ asafoetida.
5.chopped onion, 2 red chillies, 1/2 tsp kasmiri chillies1/4 tsp red chillies powder, 1/2 tsp tumeric poder , 1/2 tspgaram masala .
6. cook for 6-7 minutes on low flame, add tomato paste and soaked chickpea .
7. Add boiled potato, 1 tbsp chaat masala
8. 1 tbsp fenugreek leaves, Salt as per taste, 2 Glass of water/approx 700 ml, and Presure cook upto 8-9 whistle intial 3 whistle- on high flame rest 5-6 whistle -on medium flame/low flame..
9. For puri 1.5 cup whole heat flour,1/4 tsp salt, i tsp oil, 1/4 tbsp cumin seeds .
10. Knead a semi soft dough, rest for ten minutes, after that make rolled .
11. first preheat oil and then bake rolled puri in oil until color is goden .
12. Kala chana puri recipe is ready.
